We currently cultivate two locally-adapted hop varieties developed from Missouri stock, Hybrid 13 and Hybrid 14. Complemented by Vista—a Pacific Northwest variety proven resilient in Midwest growing conditions.
Our hops are dried using a method that maintains temperatures below 120°F, preserving volatile aromas essential for brewing that evaporate at higher temperatures.
